Video: Russian Ikra Recipe & Zucchini Harvest

Let's make a Russian and Ukrainian inspired dish called Ikra! I love growing zucchini in the summer, and I thought it would be fun to research recipes from my Polish and Ukrainian heritage to make with my zucchini harvest. Ikra is traditionally made with eggplant, and it is known as "poor man's caviar." Easy to make, preserves beautifully, and it is perfect for using up veggies from your garden harvest. It's lovely to eat spread on crostini.

Welcome to my cozy fantasy world of cooking! These soothing ASMR sounds and gentle music will transport you to my cottagecore kitchen and hobby farm on the Iowa prairie with my cat and chicken friends. Come enjoy the beauty of nature and slow living in the countryside with me. I hope you enjoy this week's video of my fairytale country life!
