Delicious fresh strawberries are transformed into a dreamy, thick sauce for topping pancakes, waffles, ice cream, or cheesecake. This sauce is easy to make and is ready to enjoy in just 20 minutes!

This Homemade Sweet Strawberry Sauce is a simple recipe made from strawberries, sugar, lemon juice, cornstarch, and vanilla. It’s an excellent addition to your table for breakfast, brunch, or dessert time. You can easily make this strawberry sauce yourself rather than purchasing it from the store!

This sauce is technically a compote, which is simply cooking chopped fruit in a thick sugar syrup. You can easily turn this strawberry sauce into a different kind of fruit sauce by substituting in blueberries, raspberries, or blackberries.

To make your own homemade strawberry sauce, you will need to gather a few key ingredients. This sauce is truly so simple to make. The only thing you’ll need to run out and fetch from the market is some freshly picked strawberries!

  • Strawberries. Fresh strawberries will have the best flavor, but you can easily use frozen strawberries instead. Thaw out the frozen strawberries and drain them before cooking into your sauce.

  • Lemon Juice. Fresh lemon juice is best, but bottled lemon juice can be used in its place.

  • Cornstarch. Cornstarch is used to give the sauce its thickness similar to pancake syrup, but you can omit this ingredient if you prefer a thinner sauce.

  • Light Brown Sugar.

  • Granulated Sugar.

  • Vanilla Extract.

Step One: Begin by adding strawberries, water, lemon juice, cornstarch, brown sugar, and granulated sugar to a medium saucepan set over medium heat. You will want to make sure to be stirring constantly to prevent the sauce from sticking to the bottom of the pan or burning.

Step Two: Bring the mixture to a steady simmer and then lower the heat, continuing to stir. Simmer the sauce for a further 5 minutes, or until the strawberries have softened and started to break down. You can crush the strawberries gently with a potato masher or fork as they cook.

Step Three: After simmering for 5 minutes, remove the pan from heat. Allow the sauce to cool down to room temperature before transferring it to a dish to pour from. The sauce will continue to thicken as it cools.

Step Four: You may serve the strawberry sauce warm or at room temperature. This sauce is not cooked long enough to thicken fully like a jam, so it should stay drizzly even when cold. Homemade Sweet Strawberry Sauce

Delicious sweet strawberries are transformed into a dreamy, thick sauce for topping pancakes, waffles, ice cream, or cheesecake!

Ingredients

  • 2 cups (336 g) fresh strawberries, hulled and quartered
  • 2 tbsp (30 ml) water
  • 2 tsp (10 ml) fresh lemon juice
  • 1 tbsp (10 g) cornstarch
  • 3 tbsp (38 g) light brown sugar
  • 3 tbsp (38 g) granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. To a medium saucepan, add the strawberries, water, lemon juice, cornstarch, brown sugar, and granulated sugar. Set the pan over medium heat and stir constantly, until the sugar is dissolved.
  2. Bring the mixture to a simmer and lower the heat, continuing to simmer and stir the sauce until the strawberries begin to soften and break down, about 5 minutes. Gently crush the strawberries as they soften, until you have some nice chunks.
  3. After 5 minutes, remove the pan from heat and let the sauce cool down significantly before transferring it to a heat-safe dish or container. Use the cooled sauce immediately.
  4. To store the strawberry sauce, place it in an airtight container and store in the refrigerator for about 1 to 2 weeks. Alternately, it can be frozen for about 1 year. To serve later, simply reheat the sauce over the stove for a few minutes and serve warm.
