How to Make Ball® Corn Relish
It cannot be summer without sweet corn! Don't you agree? I am starting to see some roadside stands selling it by the dozens here in Iowa.
This Ball® Corn Relish recipe is a perfect way to save those fresh and sweet ears to enjoy in the winter months. I did not know I loved corn relish until I moved to this part of the country! It's wonderful paired with your next barbecued supper. Grab some Ball® Smooth Sided Half-Pint Jars and give this recipe a try.
Ingredients & Recipe:
MAKES ABOUT 6 (8 OZ) HALF-PINT JARS:
2 cups white vinegar
2/3 cup sugar
1 Tbsp salt
4 cups cooked corn kernels (about 8 ears)
2 cups diced mixed red and green bell peppers (about 2 large)
3/4 cup diced celery (about 2 stalks)
1/2 cup finely chopped onion (about 1 small)
1 Tbsp dry mustard
1 tsp celery seeds
1 tsp ground turmeric
DIRECTIONS:
Prepare your boiling water bath canner. Heat jars and lids in simmering water until ready for use. Do not boil.
Combine vinegar, sugar, and salt in a large saucepan. Bring to a boil, stirring to dissolve sugar. Add corn, red and green peppers, celery, onion, mustard, celery seeds, and turmeric. Reduce heat and simmer 15 minutes, stirring frequently to prevent sticking.
Ladle hot relish into a hot jar, leaving 1/2 inch headspace. Remove air bubbles. Wipe jar rim, apply lid and band to fingertip tight. Place jar in boiling water bath canner and repeat until all other jars are filled.
Process jars for 15 minutes, adjusting for altitude. Remove canner from heat, remove lid, and let jars stand in the hot water for 5 minutes. Remove jars from canner and check seals after 12-24 hours.
