Fresh Salsa in Ball® Stars and Stripes Pint Jars

If you know me, then you know how deep my love of tortilla chips and salsa is. It is my go-to snack, and I do not plan on ending my relationship anytime soon!

I have tried a lot of Ball® Home Canning’s salsa recipes over the years, but this was my first time making their Fresh Salsa recipe from their website. Oh wow! This is definitely my new favorite salsa, and I cannot wait to can up jars and jars of it. I have been hunting for a truly delicious restaurant style salsa, and this one is pretty close. The thing I love about it is that it is incredibly simple to make. There’s not a lot of unique peppers or spices inside, and you don’t have to use paste tomatoes (though I did use Roma tomatoes for this batch) to make it work. If you are new to canning salsa, try this recipe first! You will not be disappointed.

ingredients & recipe:

MAKES ABOUT 4 (16 OZ) PINT JARS OR 8 (8 OZ) HALF-PINT JARS:

  • 7 cups diced, seeded, peeled, and cored tomatoes (about 5 pounds)

  • 6 green onions, chopped

  • 2 jalapeno peppers, diced (I removed the seeds and veins)

  • 4 cloves garlic, minced

  • 1/2 cup vinegar

  • 2 tbsp bottled lime juice

  • 4 drops hot pepper sauce

  • 2 tbsp cilantro, minced

  • 2 tsp salt

DIRECTIONS:

  • Prepare your boiling water canner. Heat jars in simmering water until ready to use. Do not boil. Wash lids in warm soapy water and set aside with bands.

  • Combine all ingredients above in a large saucepan and bring to a boil. Lower heat and simmer for 15 minutes.

  • Ladle hot salsa into a hot jar, leaving 1/2 inch headspace. Remove air bubbles, wipe jar rim, apply lid and band to fingertip tight. Place jar in boiling water bath canner and repeat until all jars are filled.

  • Process both half-pint and pint jars for 20 minutes, adjusting for altitude. Turn off heat, remove canner lid, and let jars sit in the hot water for 5 minutes more. Remove jars from canner and cool for 12-24 hours before checking seals.

I love the look of this Fresh Salsa in the Ball® Stars and Stripes Pint Jars. It’s very patriotic for July! My tomatoes are finally beginning to ripen, so more salsa is in my near future.
