Canned Honey Spiced Peaches

It’s peach season! I don’t personally grow peaches, but our local produce auction always has great deals on locally grown peaches this time of year. I’ve been wanting to purchase a big box of them since last year to can up and save. I’m so glad I did! From one 25 pound box of peaches, I got in 3 different canning recipes! I’ll be sharing them all here, of course. I was hesitant about making this batch of Honey Spiced Peaches. I was not sure what I would actually use it for, but I am SO glad that I made them. They’re absolutely delicious! I had a little leftover after canning, and I used it to top off a bowl of Kalona Supernatural cottage cheese. Absolutely divine!

ingredients & recipe:

MAKES 3 QUART JARS

  • 8 lbs peaches, peeled, pit removed, and sliced

  • 1 cup sugar

  • 4 cups water

  • 2 cups honey

  • 1 1/2 tsp whole allspice

  • 3/4 tsp whole cloves

  • 3 sticks cinnamon

  • Ball® Fruit-Fresh® (optional)

directions:

  • Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Simmer lids and bands in a small saucepan. Add 1-2 tbsp vinegar to water in both pots to prevent the jars from clouding.

  • While the canner is heating, prepare your peaches. Treat fruit with Ball® Fruit-Fresh to prevent browning.

  • Combine sugar, water, and honey in a large pot. Cook until sugar dissolves. Add the sliced peaches one layer at a time and cook 3 minutes.

  • Pack hot peaches into a hot jar, leaving 1/2 inch headspace. Add 1/2 tsp allspice, 1/4 tsp cloves, and 1 stick of cinnamon to each jar.

  • Ladle hot syrup over the peaches leaving 1/2 inch headspace. Remove air bubbles. Wipe jar rim, apply lids, and screw on band to fingertip tight.

  • Process jars for 25 minutes. Turn off heat, remove canner lid, and let jars sit in water for 5 minutes. Check lids for seals after 12-24 hours.
