Cinnamon Honey Graham Crackers

I shared a couple of weeks ago how to make copycat Ritz crackers at home and how easy it is. Making crackers has become my new favorite thing, and I love that it replaces a rather large portion of our snacking habits in our home. Having little ones around means crackers are kind of a go-to, as much as I may not love to admit it. At least now I know exactly what is in them, and they are so much healthier now then they were! I had to try my hand at making a graham cracker recipe, and let me tell you… it does not disappoint!

Graham crackers are made with graham flour. I did not have any of this hand, but I do have lots and lots of wheat berries and a flour mill. After a little bit of investigating, I discovered that graham flour is just whole wheat flour (think whole grain with germ, endosperm, and bran) but not ground as finely. I decided to look up a few photos of commercial graham flour and adjust the settings of my grain mill to compensate. The results were fantastic! So if you are in a similar position as I am, you can most certainly make your own graham flour at home.

ingredients & recipe:

  • 1/3 cup milk or coconut milk

  • 1/4 cup honey

  • 1 1/2 cups graham flour

  • 1 cup all purpose flour or whole wheat flour

  • 1/4 cup brown sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/3 + 1/4 cup lard

  • 3 tbsp sugar

  • 1/2 tsp cinnamon

DIRECTIONS:

  • Preheat your oven to 350* F.

  • In a glass measuring cup, stir together the milk and honey until well combined. Set aside.

  • In a large bowl, mix together the graham flour, all purpose flour, brown sugar, baking powder, and baking soda.

  • With a fork or pastry blender, cut in the lard until the mixture resembles coarse crumbs. Pour in the milk and honey and form into a dough ball. Knead until the dough is almost smooth.

  • Divide the dough in half. Roll each half into a 12x12 square or about 1/8-inch thickness. With a fork, poke holes all over the surface of the dough. Cut into 2-inch squares and place on an ungreased baking sheet.

  • In a small dish, mix together the sugar and cinnamon. Sprinkle over the tops of the crackers.

  • Bake for 15 minutes or until golden brown and no longer moist. Cool on a wire rack.

These graham crackers are flavorful and flaky, especially with the addition of home milled flour. I know that not everyone has access to this, but if you are considering a grain mill as a new kitchen tool, I highly recommend it! I use mine almost every single day. Whether or not you use home milled flour, these will still have exceptional flavor from the whole grain flour itself. I love the use of lard in this recipe as well because it leaves the crackers extra light and flaky. If you want, you can substitute the 1/3 cup with butter for an even richer taste.
