White Chocolate Cake Bites

These vanilla pansy cake bites combine everything I love about sweets and flowers! I have always loved the tiny petit fours served at a brunch or luncheon but was intimidated to make such a delicate dessert. I would not say these are actual petit fours, definitely more of a cake bite, but still give off the visual of that delightful little treat.

I found my mold here (LINK). A nice thing about the molds is that they can be used for so many things; cakes, candy, apothecary items like bath bombs and soaps, and even candles. Here we are using them to make the most delicious cake filled chocolates. The mixture for inside the cake bite is super easy, all you need is cake and frosting. This works if you have leftover cake as well. I used our Vanilla Buttermilk Cake recipe and our Buttercream Frosting recipe.

Ingredients:

  • 16 oz package white bakers chocolate

  • 9x13” baked cake

  • 1 recipe buttercream frosting

  • food coloring *optional

  • edible flowers *optional

DIRECTIONS:

  • Begin by breaking apart the chocolate into small pieces and melting in a microwave safe bowl. Every minute or two, stir to prevent the chocolate from scorching and caking.

  • Place the silicone mold on a baking sheet. With a paintbrush used only for food, paint a thick layer of chocolate into each molded flower. Place the baking sheet into the refrigerator for 10-15 minutes or until the chocolate hardens.

  • While the chocolate chills, mix the baked cake and frosting in a bowl until the mixture will hold its shape, like a ball.

  • When the chocolate has set up, begin filling each with a small portion of the cake and frosting mixture, about 1 tablespoon worth.

  • Pour the remaining melted white chocolate over each cake bite and refrigerate for another 10 minutes. The chocolates should pop right out of the flexible mold. The details are simply beautiful even by themselves.

You can decorate the outside with frosting and edible flowers. I found it was easy to use a piping bag to add different decorations to each cake bite.

These charming little desserts were a big hit with everyone in the house and were gone way too quickly! There’s also an endless amount of combinations between chocolates, cakes, frostings and flowers. I think this might be my “go to” sweet to give to friends and neighbors as well!
