Ingredients

Pumpkin Soup Bowl:
  • 1 medium to large pumpkin, preferably something wide rather than tall, and can hold at least 8 cups of soup
Pumpkin Soup:
  • 4 tbsp (58 g) salted butter
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium baking potatoes, peeled and cubed
  • 2 cups (250 g) raw pumpkin, cubed
  • 2 tsp (12 g) kosher salt
  • 1 tsp ground black pepper
  • 2 tsp (4 g) dried sage
  • 1/2 tsp ground nutmeg
  • 2 tbsp (7 g) brown sugar
  • 4 cups (960 ml) chicken or vegetable broth
  • 1 cup (240 ml) heavy cream
  • 1 cup (113 g) sharp white cheddar cheese

Instructions

To make the Pumpkin Bowl:
  1. Preheat the oven to 350° F (177° C). Set aside a large baking sheet.
  2. Remove the top of the pumpkin, cutting it off wide enough to use as a serving bowl. Hollow out the inside, removing the seeds and the gooey center.
  3. Place the bowl on the baking sheet and roast the pumpkin until soft, about 45 to 60 minutes.
To make the Pumpkin Soup:
  1. Meanwhile, begin making the pumpkin soup. In a large saucepan, melt the butter over medium-high heat. Cook the onion and garlic until the onion is translucent, about 5 to 7 minutes.
  2. Stir in the potatoes and pumpkin, cooking until slightly softened, about 5 minutes. Season all of the vegetables with the salt, pepper, sage, nutmeg, and brown sugar.
  3. Pour in the broth and bring the soup to a boil. Cover the pot and lower the heat to a simmer. Simmer the soup for about 20 minutes or until the potatoes and pumpkin are fork tender. Remove the pot from heat.
  4. Transfer the soup to a food processor or blender. Pulse the soup on high until smooth.
  5. Pour the soup into the roasted pumpkin. Stir in the heavy cream and cheddar cheese. Serve the soup warm.
