Palmiers are a French pastry made with puff pastry dough, sugar, and sometimes a little ground cinnamon. They go by many names including Elephant Ears or Palm Leaves or even Shoe-Soles! I started making these a few years ago to sell in our store during busy weekends. They are one of the most simple puff pastry desserts or breakfast treats that you can make. This makes them a wonderful recipe for a beginner pastry baker!

Created in the early 1900s, their origin traces back to France though some claim they were originally baked in Austria. While we may never know where this flaky and mildly sweet cookie comes from, it’s absolutely delicious and we will simply have to enjoy them either way!

The ingredients for making delicious homemade palmiers is incredibly simple! All you need is:

  • Puff Pastry. You can use store-bought puff pastry or homemade. If you have never made puff pastry from scratch before, it can be a little intimidating. I am here to tell you that it’s really not that difficult. If you have made pie crust before, then you can make puff pastry! There is a delicious recipe for homemade puff pastry in my cookbook, The Prairie Kitchen Cookbook.

  • Sugar

  • Cinnamon

And that’s it! Isn’t that amazing? These three ingredients create a mouthwatering and irresistible dessert that tastes incredible. I love simple recipes like that!

final thoughts:

This type of pasty is not overly sweet, which makes it an ideal breakfast or tea time treat. I love them with my afternoon cup of coffee and an episode of Downton Abbey or Anne with an E. I have a suggested amount of cinnamon sugar for this particular recipe, but you can really play around with it if you like. Some palmiers have only sugar and some are simply just puff pastry. Ingredients

  • 1 portion homemade or store bought puff pastry, about 12 x 16-inch (30 x 40-cm) rectangle
  • 1/2 cup (100 g) granulated sugar
  • 2 tsp (6 g) ground cinnamon

Instructions

  1. Preheat your oven to 425° F (218° C). Prepare two baking sheets with parchment paper and set aside.
  2. Roll out your puff pastry dough to a 12 x 16-inch (30 x 40-cm) rectangle.
  3. In a small bowl, whisk together the sugar and cinnamon until well combined. Sprinkle generously with about 1/3 of the cinnamon sugar. Lightly roll the sugar into the pastry dough with your rolling pin.
  4. Flip the dough over and repeat on the opposite side with another 1/3 of the cinnamon sugar.
  5. With the widest sides of the pastry, roll them towards each other meeting in the middle and press down. It will look something like swirled heart shape.You should have a long cylinder shaped pastry, almost like a cinnamon roll.
  6. Slice the pastry into 1/2-inch (1-cm) thick slices, making about 24 palmier cookies.
  7. Place the cookies on the baking sheets, about 2-inches (5-cm) apart. Bake for 15 minutes and flip the cookies over. Bake for another 5 to 7 minutes or until golden brown.
  8. Allow the cookies to cool for about 5 to 10 minutes before eating.
