Puff Pastry Strudels with Strawberry Jam

As an advocate for making a majority of our food from scratch every single day, I am often the person that people come to for help with meal planning and recipe preparation throughout the day. This is something that I have been meaning to write more about, especially here on the blog, as it is something that I have had to teach and train myself to do. However, I am still the person that is sitting on the couch in the evening after supper with a cup of hot tea wishing that I had a dessert to enjoy. I do absolutely love dessert!

The worst part about wanting a dessert later in the evening is that many of them need much more prep time than I am allotted, especially for something like a cinnamon roll that needs around 2-3 hours of mixing and proofing. What are you to do?!

I am here to share a delightful dessert that needs minimal prep time and bake time! Making jam strudels is incredibly easy both as a late night sweet treat or a breakfast pastry. Of course, you will need to have prepared puff pastry on hand. Once that step is finished, which can be done days in advance or have it kept in the freezer ready to go, you can make and bake these strudels up in about half an hour. Yum!

ingredients & recipe:

  • 1 portion homemade or frozen puff pastry, thawed, about 12x15”

  • 1 pint or 8 oz homemade strawberry jam

  • 2 tbsp heavy cream

  • 2 tbsp coarse sugar, for dusting

DIRECTIONS:

  • Preheat the oven to 425° F and line a baking sheet with parchment paper.

  • Cut the puff pastry into about 16 2x4” rectangles

  • Scoop about 1 tbsp of jam into the center of each rectangle. Roll up the strudels with two turns, starting with the short end of the rectangle. With a sharp knife, slice slits into the tops of each strudel.

  • Brush with heavy cream and sprinkle the tops with coarse sugar. Bake for 20-25 minutes or until the pastry is crisp and golden brown. Allow to cool for about 5-10 minutes before eating.

  • Dust with powdered sugar and serve.

This is a wonderful way to use up some of those preserves from the previous summer. These strudels can be made with any flavor of jam, preserves, or jelly. I prefer to use homemade, if I can!
